Ceylon cinnamon is more expensive and more difficult to obtain than other forms of cinnamon. Cinnamon differs from other spices in that it contains less coumarin, a chemical that can be toxic to the liver in big doses. Furthermore, the amount of cinnamon essential oil (cinnamaldehyde) is lower than that of other forms of cinnamon.
